About Jasper Coffee
Merilyn Parker and Wells Trenfield started Jasper Coffee in Collingwood in 1989, naming it after their son. They came from the art world, and that way of seeing still guides how they work. As co-founder Wells Trenfield says: 'Human endeavour and human energy — that's what this coffee journey is all about.' Today they roast in Abbotsford and have cafés at Fitzroy, Prahran Market, and Highpoint. Over 35 years, they've sourced from Ethiopia, Colombia, Peru, East Timor, Guatemala, Mexico, Brazil, and Costa Rica. Along the way: Australia's first carbon neutral coffee roaster (2009) and its first B Corp coffee roaster. Their Ethiopia Yirgacheffe was rated best-tasting coffee on supermarket shelves in Australia by The Guardian in 2025. A subscription saves 15%, with the option to select your own coffees or let the team curate.
