Vacation Coffee started in 2016 as an unnamed roastery, supplying some of Melbourne's top cafés from a communal roasting space in Cremorne. Founders Jimmy, Matt and Kael each came from the specialty coffee and hospitality world. A year later they opened their first café: an espresso bar seating 10 at the base of a historic building, with views of Flinders Street. Today Vacation roasts in Melbourne, drawing on years of experience and a love for naturally processed coffee. As co-founder Jimmy puts it, "The magic happens in the roasting." Their cafés were named among the World's 100 Best Coffee Shops in 2025 and 2026.
