About Underground Coffee Roasters
In 2007, Tim Briggs was licensee of the Lapstone Hotel when Paul Bassett's 13-part TV series Living Coffee changed his direction. Bassett was World Barista Champion at the time. Briggs sent him an email. It was ignored. He persisted, and eventually the pair spent a decade working through coffee together. Underground Coffee Roasters was the result. Founded in 2015 by Tim and Shelley Borysko, it started in a garage in Glenbrook at the base of the Blue Mountains, before moving to Penrith. They roast to order, source direct-trade, and have cafés in both Glenbrook and Penrith. Their mission statement hasn't shifted: 'a great product at a competitive price.'
