Carlos trained as a chef before he ever pulled a shot. His first espresso bar opened in 2002 on Forest Road, Hurstville. Over the next decade he ran cafés and supplied local clubs, learning what an 8am machine breakdown feels like. So when King Carlos Coffee started roasting, it came from the other side of the bar. In their words: "We are not a roaster who decided to sell to cafes. We are cafe owners who decided to roast." Today the beans are roasted weekly in small batches in Hurstville, single origins and blends, every bag dated. The roastery and coffee lounge at 18 Weston Road is open seven days. Brew Club members get a flat 20% off four-packs, roasted and sent on their schedule.
