Craig Simon has worked every link of the coffee chain — farming, roasting, brewing, service. After close to 15 years, he founded Criteria Coffee in 2018 to help others chase the same standard. His record backs it: three turns representing Australia at the World Barista Championship (2012, 2014, 2018) and the country's first Q-Grade Instructor qualification in 2015. Today Criteria runs as a co-roastery in Melbourne — a shared space where cafés and coffee brands learn to roast under Craig's guidance. The focus is knowledge as much as coffee. Criteria roasts single-origin beans, with past origins including Kenya, Rwanda, Peru, Ethiopia and Costa Rica. You can buy by the bag or take the fortnightly subscription from $16.50 every two weeks.
