In 2005, ST. ALi began roasting between café tables in a South Melbourne warehouse, before most people took specialty coffee seriously. Nearly 20 years on, it roasts in-house in Port Melbourne and says it helped shape how Melbourne drinks coffee. The name comes from Ali ibn Umar al-Shadhili, a fourteenth-century cleric known as the patron saint of coffee. Today the business runs cafés in Melbourne, Brisbane and Bali, works across four countries, and serves over 1,000 partners. It stays crew-owned and roasts to order. The green buyer spends hours over samples, and the coffee is built on direct relationships with farmers. That focus on sourcing is what sits behind every bag.
