In 1938, a Danish gentleman named Mr Quist opened a roastery on Little Collins Street. His aim was simple: serve the coffee needs of Melbourne's growing European migrant community. The beans were roasted right there on the premises. More than 80 years on, Quists is still family-owned — three generations, over 50 years under the same family. Master roaster Jim Baruta now runs the beans through a Brambati roaster at a custom-built roastery in Research. The sourcing focus is single-origin, blends, specialty and microlot coffee, with an eye on ethical and sustainable farming. The signature Miscela Italiana Melbourne Blend has earned Golden Bean silver and bronze medals along the way.
