Who is Pillar Coffee?
Thirty years behind the espresso bar, twelve behind the roaster — that is the grounding Pillar's owners brought to the roastery. From running cafés to roasting full-time, the focus has been finding the truth in coffee. Today Pillar is a micro-roastery in Braeside, Victoria, buying only 85+ score specialty beans that are ethical and traceable. Single origins are roasted for espresso or filter, with signature blends Prime and Wayward alongside limited-release and competition coffees. A new range rotates in each month. Pillar is also backed by Bush & Bush Coffee Systems, an education and equipment venture owner Clay Bush runs with his brother Jake. A fortnightly subscription starts at $20.
