In 2001, a small roaster called Grata Gourmet Coffees opened in a modest shop in Bendigo's CBD. Cafés in regional Victoria had little choice beyond the large national roasters. This was the first specialty roaster based outside Melbourne. The craft, as they put it, was still finding its place. Small-batch wholesale roasting built a loyal following across cafés, restaurants and home brewers. As demand grew, the business rebranded to Custom Coffees. The new name reflected its purpose: "crafting blends tailored to the people who serve them". It then moved to a purpose-built roastery in Mayfair Park Estate, East Bendigo. Twenty-five years on, in their words, "we still roast every bean ourselves in Bendigo." And they still answer the phone when customers call. The range runs to blends, single-origins and decaf. Along the way: Golden Bean medals and a Best Decaf in Australia title.
