Who is Map Coffee?
Map Coffee roasts the slow way, and says so plainly. It follows a traditional Italian method of slow roasting. The idea is simple: the water in the raw bean evaporates slowly, so the sugars caramelise without burning. The beans cook evenly, inside and out. Map Coffee is based in Brunswick, Melbourne. Its master roaster is Santo Bucchero, and the roasting runs on STA Impianti equipment. Each origin is roasted separately, at its own temperature. In Map's words, that is how it chases "optimum quality". The roaster serves home drinkers, cafés, restaurants, businesses and community clubs. Businesses can get coffee machines on loan at no upfront cost, and blends can be tailored. If you like a classic Italian-style espresso, this is a roaster worth watching for a deal.
