Who is Proximal Coffee?
Proximal Coffee's story starts with Ev, at fifteen, in the little town of Lilydale. The first job was waiting tables and, "if I was lucky, making coffees." Café work carried on through teaching studies at Deakin University. Then came a question: was secondary teaching the right path? Ev chose to travel, working as the "Aussie barista" at coffee bars in Ireland, Spain and Germany. That's where Ev "found who I wanted to be." Today Proximal roasts small batches in Lilydale and supplies cafés and homes across the valley. The idea is simple: "Coffee has always been about connection." The beans are specialty and ethically sourced, from espresso blends to single-origin. The Best Friends Blend draws on 35 families in Colombia's Ubaque region and Burundi's Kirasa washing station.
