Dan Smith found coffee in the Army. A back injury forced him out of the infantry, and he took a job at the club attached to the 6th Battalion, Royal Australian Regiment. He became head barista, then assistant manager, with the club's coffee growing from about 16kg a week to 40-50kg by the time he left. In 2014 he and Anna Smith opened First Fruits Coffee on the Gold Coast. Today they roast small-batch in Labrador and run cafés in Labrador, Ashmore, Southport and Tokyo. Anna, a former wedding planner and cake baker, runs hundreds of events a year. The sourcing is deliberate: they research their own supply chains rather than trust ethical-trade labels, and they won't pad a roast with low-grade beans.

Barista Course
Usually, coffee courses cost over $200 for just one session. This combined online and in-house course is only $120. Courses run on some Thursdays or Saturdays in the afternoon for 3 hours at our café
