Jerome Lebel-Jones is a third-generation coffee roaster. He grew up surrounded by the craft. Then he cut back on caffeine to sleep better. He found most decaf options were poor, too often "a sidekick rather than the hero." That frustration became Do Coffee Roasters, a decaf specialist based in Melbourne. It roasts specialty grade decaf and low-caffeine coffee. The belief behind it: "Every cup of coffee should be excellent." The standards start early. Sourcing its first decaf, the team cupped 22 options and bought just one, San Antonio Sugarcane Decaf. Every roasted batch is sorted for defects, checked for colour and cupped.
