Who is Thylacine Coffee?
It started in a shed in Tasmania. Brothers Shaun and Kim spent wintry nights there, "surrounded by the charming clutter of old Italian coffee machines." They tinkered, tweaked, tested and tasted. The aim was a roast that "felt like Tassie in a cup." In 2012 they sold their first cup at Salamanca Market in Hobart. Since then the business has grown from that family shed to a factory just outside Hobart. Today Thylacine Coffee is based in Cambridge, Tasmania. The range is three signature blends: Mount Wellington / kunanyi, Salamanca and Port Arthur. They run from full-strength medium-dark to a smooth light roast. Buy whole bean or ground to suit your brew method, or take a monthly subscription.
