In Sydney in 2003, roasting was still a dark art and green beans were hard to find. Single O's founders bought a roaster anyway and named it Big Boris. That bought them total control over quality, flavour and freshness. It also began a long run with single origins - a chocolatey Mexico Chiapas, an Ethiopia Sidamo that tasted of oranges. More than twenty years on, Single O roasts specialty coffee and runs cafés in Surry Hills, Carriageworks, Newstead and Tokyo. The focus has not shifted: single origins, long-term producer relationships, and rewarding growers for the quality behind those flavours. It is a certified B Corp and a supporter of World Coffee Research.
