Hark began with a simple motto: flavour is king. Founders Sam McKay and Theo Engela wanted to ignore the condescending vibe of specialty coffee culture and aim for something better, simply delicious coffee. A few years in, they saw the peak more clearly. It had a north face: radical consistency. So they rebuilt how they roast. Today Hark is a South Australian roaster based in Adelaide, running three of its own cafés in Panorama, Malvern and South Brighton. They roast on 100% convection energy using technology and software developed in-house, and source traceable, ethical coffee from farmers around the world. The aim stays the same: coffee that excites, with a delicious tension on the palate.
