Who is Cassiopeia Specialty Coffee?
Cassiopeia began in 2006 as a single espresso bar in the Blue Mountains, NSW. Zac Suito founded it. It has grown since. Today there are five cafés, across Katoomba, Wentworth Falls, Springwood, Windsor and Emu Plains. It has its own bakery too. The roastery is now based in Emu Plains, NSW. Every batch is roasted by hand, right next to the Emu Plains store. The same team sources the beans, runs the roaster and looks after the cafés. Sourcing is ethical, and the roaster is small. In their words: "small enough to care about each bag, serious enough to keep your bar consistent shot after shot." Coffee subscriptions are available if you want it on repeat.
