In 2016, Christos Panas set out to give Darwin a roaster of its own. At the time the city had none. He brought 28 years behind the bar, with barista competitions in Sydney and Melbourne and a second-place finish in the 2013 cafe Biz Pura latte art Smackdown. He named the brand Dtown Coffee Roasters, a nod to Darwin's nickname. The goal was simple: high-quality coffee locals could identify with, to rival what interstate drinkers enjoyed. Today the beans are roasted every week at the Coconut Grove roastery, and the café on Travers St pours them Monday to Friday. Sourcing leans single-origin, drawing on Ethiopia, Papua New Guinea and Mexico. It is founder-led coffee, built for a city that did not have its own until Panas made one.
