Redbrick started in 2011 in a small suburban café lined with Canberra red bricks. A coffee roaster was squeezed into the corner. Milk crates sat on the grass and the chit chat was endless. In their words, "we built a space to connect the community with the coffee we loved." The approach has not changed, though there are fewer milk crates and the roastery is a little bigger. Today Redbrick roasts in Fyshwick, five days a week, on a 30kg Giesen and the original 12kg Probat. Three Canberra cafés carry the coffee: Fyshwick, Civic and Curtin. Sourcing runs through relationships with Melbourne Coffee Merchants and Cofinet that go back to 2011. Origins include Bolivia, Ethiopia and Brazil. Every batch is cupped for quality and consistency. As they put it, "It doesn't need to be complicated, just good coffee however you drink it."
